I’m a sucker for chocolatey goods and loved being able to remake double chocolate chunk cookies that come out so gooey and delicious. The ingredients in this number are super simple. At first glance it may seem like a lot of ingredients but I’m sure you already have the majority of them laying in your pantry. All of the main ingredients are meant to provide your body with wholesome energy rather than cause inflammation and irritation in your gut like most cookies will.

Have some fun with the recipe too! You most definitely can smash out the whole pile of dough into a giant cookie and bake in a cast iron pan. Better yet you can double the size of the cookies rather than making 10 small cookies. Just make sure to cook it for longer so that it cooks all the way through!

Double Chocolate Chunk Cookies

Almond Flour

You can see a pretty decent theme of me utilizing almond flour in a lot of the baked goodies here. That is all thanks to this alternative flour almost working at a one to one ratio in most recipes! Almond flour boasts a lot of benefits for the body thanks to it being created from simply just ground up almonds. The difference between the meal and finely ground almond flour is just that it gives goods a different texture. If you want a coarse texture utilize the meal, if you want smooth texture buy the finely ground flour.

Let’s say you want to cook up a batch of other cookies for someone who is gluten free just use the same amount of volume (aka weigh the flour) as their is regular flour and then slightly increase the rising agent in the recipe. This allows for the heavier almond flour to still get the same rising effect as a regular white flour would.

On to the benefits, one cup of almond flour contains roughly 85-95 almonds providing you with more than the 100% of the recommended intake of vitamin E. The flour also contains energy boosters such as riboflavin (Vitamin B2), copper, and manganese. It is also known to be a good source of iron, calcium, and potassium. Overall, almond flour when used in balanced proportions in recipes can provide you with a sustainable source of energy without creating heavy blood sugar spikes.

Double Chocolate Chunk Cookies

Double Chocolate Chunk Grain Free Cookies

This chocolatey goodness is brought to you and adapted from the rachael’s good eats cookie skillet singles recipe. I’ve added lots and lots of chocolate goodness to these and a hint of mint to give it an extra layer of flavor and the combo is insane!

Dry Ingredients

  • 1.5 C Almond Flour
  • 1/4 tsp Baking Soda
  • 1/4 tsp Baking Powder
  • 1/2 tsp Cinnamon ((optional))
  • 3 T Cacao Powder
  • 1 Bar Eating Evolved Cashew Milk Chocolate ((any dark chocolate bar will work))

Wet Ingredients

  • 1 whole Egg
  • 3 T Maple Syrup
  • 1/4 C Coconut Oil ((melted))
  • 1/3 C Almond Butter
  • 1 tsp Vanilla Extract
  • 1/2-1 tsp Peppermint Extract ((optional & depending on how much mint flavor you want))
  • 2 T Unsweetened Almond Milk
  1. Preheat oven to 325F.

  2. Whisk egg in large bowl then pour in maple syrup, melted coconut oil, cashew butter, vanilla, peppermint, and almond milk to whisk again.

  3. Stir in almond flour, baking soda, cinnamon, cacao powder, and some of the sea salt. Fold in chocolate chunks, leaving several chocolate chunks aside.

  4. Place parchment paper over a baking sheet and use your hands to form 10 even sized 1 inch thick cookies

  5. Place the last chocolate chunks in the tops of the cookies.

  6. Place in the oven for about 13 minutes on the center rack. Turn the oven on to broil and cook and additional minute. (Keep an eye on them)

Paleo Apple Raspberry Crumble

In Sweden we have something called “Fika”. Fika is the art of the Swedes classic coffee break. The concept is to take a break in your day making time either for yourself or socializing. You typically have a cup of coffee and accompany that with a small treat like a swedish cinnamon bun. Better yet, I like to pair this Apple Raspberry Crumble with a scoop of Vanilla Bean Ice Cream! Of course you can not forget to have that cup of coffee too! This recipe makes for the perfect mid day snack because it doesn’t leave you in an afternoon food coma.

Paleo Apple Raspberry Crumble

The simple crumble is made solely from a variety of nuts ground up and some very simple ingredients that take no time to throw together. It makes for the perfect dinner dessert as well if you are not a huge fan of baking. I promise you this one is really tough to “mess up” and it helps clean out any of those frozen fruits that you feel are just lingering in your freezer and not being used. There are so many great combinations you can make, but I will let you in on a secret. This Apple Raspberry Crumble will be your NEW favorite combo. Trust me.

Paleo Apple Raspberry Crumble

Simple and easy recipe you can’t go wrong with.

Le Crumble:

  • 1/2 Cup Melted Coconut Oil ((can buy liquid cold pressed))
  • 1/2 Cup Maple Syrup
  • 1/4 tsp Cardamom ((ground))
  • 1/2 tsp Vanilla Extract or Powder
  • 1 Cup Chopped/Ground Walnuts
  • 1/2 Cup Chopped Pecans
  • 2-2.5 Cups Almond Flour ((NOT meal))

La Filling:

  • 2 Whole Green Apples ((peeled & cubed))
  • 1 Cup Raspberries ((fresh or frozen))
  1. Preheat oven to 350F & grease pie pan with some coconut oil

  2. Blend all of the crumble ingredients until crumbly. (add more almond flour if too runny or soft)

  3. Layer half of the apples in the bottom of the pan & then add 1/4 of the crumble topping throughout

  4. Add the rest of the apples & all of the raspberries then layer the rest of the crumble on top

  5. Place in the oven for 40-50 minutes or until fruit juice is bubbling.

Note: if top browns too quickly add tin foil over the top

Paleo Apple Cake

So what makes this cake so great for those summer nights? Well I realized I had been craving apple cake but wanted a new level of flavor! At the time I was down in the beautiful land of College Station, Texas where all I had with me was apples, an orange, my usual “so called paleo” baking flours and then a half-filled pantry. (disclaimer: no I am not a paleo dieter, I count nothing and eat everything that I know will fuel by body to the best of its ability)

I made some swaps in the recipe and then last minute made a BOLD decision to make it more flavorful and BANG in went some orange zest. Which in the long run I think made it super moist (yup I said it)! If your mouth is already watering and you just want to jump to the recipe head to the bottom. For those who want the nutrient breakdown of this bad boy keep reading!

Paleo Apple Cake

I’m all about making sure my recipes have on point flavors to them and don’t taste “too healthy” as my own father likes to say about most things I bake. He’s typically the final say as to wether or not these recipes even go up on the blog haha. Anyways, let’s give this cake the nutrient breakdown!

Almond Flour

This has become a really popular flour to bake with as of recent which I think is awesome. It doesn’t quite substitute for flour at a 1:1 ratio because you do get a more dense product typically but it sure can make a lot of delicious cake-like copycats. Almond flour most definitely has a nutritional advantage as compared to processed flours. It obviously contains the same nutrient profile as the whole almond since they have only been ground into a fine flour. It is a gluten free flour option for those with celiac disease and has a high protein content. Other top perks about utilizing this flour are the monounsaturated fats that provide sustainable energy. Finally the main micronutrient your body gets is Vitamin E. FUN FACT: 1/4 Cup of almond flour can provide you with 40% of your daily recommended intake of vitamin E.

Paleo Apple Cake Recipe

Apples

Moving on to the apples in this delicious cake! Fruit has been getting a bad rap lately because they have “sugar”. This is true, apples and all fruit contain sugar, specifically fructose but I believe all things in moderation will provide our bodies with the fuel it needs. Cutting food groups out of our daily diet is never the answer unless you are severely allergic. Despite a “high” sugar and carbohydrate content in apples they do have a low glycemic index meaning the effect on the body’s blood sugar levels is quite low. This is typically due to the high fiber content and polyphenols in the fruit.

The main micronutrients you will find in apples include high levels of Vitamin C (ascorbic acid) a common antioxidant for the body and the other being potassium.

Now get ready for the easiest apple cake you have EVER MADE with less than ten ingredients!

Apple Cake with Zest

The best apple cake for those summer evenings with tea!

  • 2 Cups Almond Flour ((Bobs Red Mill))
  • 1 tsp Aluminum-Free Baking Powder
  • 1/4 Cup Extra Virgin Olive Oil ((can also use coconut oil melted))
  • 1/4 Cup Raw Honey ((local if possible))
  • 1 tsp Vanilla Extract
  • 2 Whole Organic Eggs
  • 1 Whole Orange for Zest
  • 1 Large Red Apple ((diced))
  • 1/4 Cup Flaked Almonds ((for topping))
  1. Preheat the oven to 320F & prepare a round 8 inch baking pan. I chose to just use parchment paper for easier removal.

  2. Combine Almond Flour, baking powder, olive oil, honey, vanilla, eggs, and orange zest from one whole orange

  3. Mix together in a medium bowl until well combined

  4. Fold in the diced apples

  5. Press down the batter into the pan firmly.

  6. Sprinkle the top with flaked almonds, you can add additional coconut flakes as well!

  7. Bake for 60-75 minutes then let the tine rest for about 30 minutes before removing from the pan

  8. Enjoy with some tea or coffee!

I don’t know about you but cheesecake has always been one of those intimidating desserts to make. I decided to make a simple no-bake Chocolate Cheesecake, dairy free recipe for you guys using whole food friendly ingredients! Find the Recipe at the bottom of the page.

No-Bake Chocolate Cheesecake Bites

Le Crust:

Let’s start with the crust which I could have made from scratch. However, to cut down on some time I used Thunderbird Bars Hazelnut Coffee Maca bars to keep it simple. Any real food bar can work as they’re easy to mold when pressing into the muffin tin. The Coffee flavor in this particular bar really brings out the rich chocolate flavor in these bad boys as well.

Once the bars are pressed into your muffin tin you are on your way to creating the delicious chocolate cheesecake filling!

Le Filling:

I wanted to make the filling with whole ingredients and opted for a heavy amount of cacao powder. I love a rich chocolate flavor so if you’re more of a sweet tooth fan then add more maple syrup or dates.

Finally, A litte pro-tip for when you are done filling the muffin tins. Use a rubber spatula to scrape off the tops to make them nice and even. After you’ve let them sit in the freezer for an hour or so use a blunt end knife to pop out each of the mini cheesecakes! Leave a review at the bottom if you end up making these, I love hearing how yours turned out!

Mini No-Bake Chocolate Cheesecake

A rich, creamy, dairy-free chocolate cheesecake without all the hassle!

Crust:

  • 4 Thunderbird Bars (I used hazelnut-coffee-maca bar)

Filling:

  • 3/4 C Cacao Powder
  • 2 C Raw Organic Cashews (unsalted)
  • 5 Whole Pitted Dates (can replace with an additional 1/4 C Maple Syrup)
  • 1/2 C Coconut oil
  • 1/4 C Maple Syrup
  • 1/2 C Water
  • 2 tsp Vanilla
  1. Soak cashews for 10-15 minutes in hot water then rinse under cool water to soften nuts.
  2. While cashews are soaking unwrap all of your Thunderbird bars and divide into thirds. The fourth bar can be used to fill out any bottoms that are a bit thin.

  3. Press the divided bars into 8-9 of the muffin tin bottoms to create your crust, make sure it’s not too thin

Mixing Filling:

  1. Place cashews into blender or food processor with maple syrup, vanilla, and water. Blend for 1 minute to get it creamy, you may need to scrape down sides after 30 seconds.
  2. Next, add in cacao powder and coconut oil.
  3. Blend for an additional 2-3 minutes. You may have to scrape down the sides a few times. Keep blending until smooth
  4. Once the filling is blended begin scooping your filling into your muffin tin. Fill them to the top and scrape off the tops with a spatula to make then even.
  5. Place the muffin tin into your freezer to allow them to set for 1-2 hours before removing from pan.
  6. Use a thin knife to pop out of tins and let stand for 1-2 minutes before indulging in these rich chocolatey cheesecake bites!

Cocoa Coffee Energy Bites Recipe

As a runner I am someone who can not run on an empty stomach. I believe it to be so important that we fuel our workouts properly. Personally I feel and perform much better with some fuel. This is the same for when I finish a workout, I always make sure to replenish my body within the first fifteen to thirty minutes of walking back in the door.

Why Fuel Before Workouts?

So what does the science say behind fueling our bodies during endurance activities? Well, carbohydrates are the first source of energy in which our bodies pull resources from when we are active. If there are no carbohydrates our body will utilize protein from our muscles. In turn, our body eats away at its own muscle if there are not enough carbs in our system to perform our runs or workouts. If your aim is to get faster and stronger we do not want muscle deterioration to be happening.

Why Fuel After Workouts?

After endurance activities it is priority to refuel within the hour of you walking through your front door! This window of time is where you reap the most benefits if refueling properly allowing you to get stronger. Focus on getting a good source of protein here to provide your body with the building blocks (essential amino acids) aiding in repair and building of tissues. Of course, we cannot forget to replenish with complex carbohydrates and fats as well!

Coffee cocoa energy balls

Pre/Post Workout Recipe

I typically make these with oat flour if I am wanting something prior to my workout. On the other hand for post workout fuel I use almond or oat flour and make sure to add a protein or collagen supplement.

Going Cocoa for Coffee Energy Balls

This is a delicious snacking recipe for the runner and gym goer who needs a quick bite pre or post workout. I love grabbing these to refuel or even before going to workout when I know I need a little something to help get me through my workout but don’t have time to digest an entire meal.

  • 1 C Almond Flour ((Can sub 1 1/2 C Oat Flour/Ground up Oats))
  • 1 Tbsp Raw Cocoa/Cacao Powder ((unsweetened))
  • 2-3 tsp Finely Ground Coffee Beans/Grounds ((instant coffee works too))
  • 2 Scoops Protein Powder of choice or Collagen ((chocolate or Vanilla))
  • 1/2 C Nut Butter of Choice ((almond butter & cashew butter are my favorite options in this))
  • 2-3+ Tbsp Dairy Free Milk of Choice ((I used Califia Farms Vanilla Almond Milk))
  • Extra Cocoa Powder for Dusting
  1. In a mixing bowl combine, Almond flour, cocoa powder, finely ground coffee, & protein/collagen powder

  2. In a microwave safe bowl or sauce pan melt & combine maple syrup & nut butter. Mix well until incorporated.

  3. Pour wet ingredients into dry mixture. Mix well, if the batter is too thick start adding dairy free milk of choice until a less thick batter forms. If too thin add some more flour.

  4. Using your hands or a cookie scoop form into bite sized balls.

  5. Refrigerate for at least 10 Minutes

  6. Store in air tight container in fridge to enjoy post run.

Coconut Cardamom Fat Bombs

A quick to go snack before those awkward time of day workouts.

  • 1/2 tsp Cardamom ((heaping teaspoon if you like cardamom like me))
  • 1 tsp Cinnamon
  • 1/4 C Melted Coconut Oil
  • 3 T Coconut Butter melted
  • 1/4 C Almond butter ((Spread The Love Nut butters are delicious))
  • 3 T coconut shreds unsweetened ((Bobs Red Mill is great!))
  • 4 Scoops collagen peptides
  • 1 tsp vanilla extract @simplyorganicfoods
  1. Mix all the ingredients in a bowl & pour into mini cupcake forms. Place in freezer for at least 2 hours to harden.

  2.  Store in fridge for an easy grab and go snack!

Mocha Coconut Bars

Perfect with your afternoon coffee.

  • 1/4 C Coconut Oil
  • 1/4 C Cacao Powder
  • 1/2 C concentrated bulletproof coffee ((brewed))
  • 1/2 tsp vanilla extract
  • 1/8 C Organic Maple Syrup
  • 1 C Unsweet Coconut shreds
  • 1/4 C ground steel cut oats or rolled oats
  • 1 Tbsp Almond Flour or ground almonds
  • 3 Scoops Collagen Peptides
  1. Heat coconut oil on low heat in a sauce pan until melted

  2. Remove from heat. Add Cacao powder, Coffee, Maple Syrup, & Vanilla

  3. Mix in all of the dry ingredients

  4. Place sauce pan into freezer for roughly ten minutes

  5. Pour mixture into a baking pan or mini muffin tins. Top with more shredded coconut flakes.

  6. Place in freezer to let set. Once hardened cut into squares and store the mini muffin tins in fridge to have them ready to eat.

Orange & Almond Dark Chocolate

knock off of Lindt Orange and Almond Flavored chocolate with all organic ingredients

  • 1-2 Bars Eating Evolved Chocolate ((I prefer the cashew milk because it's entirely lactose free))
  • 1-2 Tbsp Organic Almond Slices ((bought them pre-sliced))
  • 1 Package Tangerine Flavor Dried Fruit ((crushed; I prefer Crispy Greens))
  1. Melt chocolate in microwave safe bowl in 30 second increments stirring really well in between

  2. Pour mixture into a small bread pan (3x6ish) lined with wax paper

  3. Pour in almonds and push into the chocolate

  4. Crumble freeze dried fruit or keep it whole and press into the chocolate

  5. Let it freeze for at least 20-30 minutes or overnight. I prefer to break it up into larger pieces and store in a stasher bag or ziplock bag

Coconut Whipped Cream

  • 1 Can Coconut Milk ((no guar gum & chilled over night))
  1. Use can opener to open chilled coconut milk. Make sure you open it from the bottom of the can.

  2. Once open there should be the clear liquid which you can save for smoothies or discard. 

  3. Then you will see the thick white coconut milk at the bottom which is what you want to scoop out and place in a bowl (preferably place in the freezer while opening coconut milk)

  4. Using a hand mixer, whisk the coconut milk until stiff peaks form. 

  5. You can add a sweetener of choice or even ground freeze dried fruit for additional flavor and natural sweetness.

Banana Nut Muffins

  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1.3 C coconut flour
  • 3 Bananas ((very ripe))
  • 1 C Walnuts ((crushed))
  • 1.3 C Almond Butter
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 3 Tbsp Coconut Oil ((melted))
  1. Preheat oven to 375F

  2. Blend all ingredients except walnuts till smooth either in blender or use a hand mixer

  3. Fold in crushed walnuts

  4. Pour batter into muffin tins, and place in oven.

  5. Let bake for roughly 20 minutes at 375F or until thoroughly baked.
